Hamburgers and Corn, Tomato, Feta & Basil Salad for Dinner – YUMMO!

I found this recipe for Corn, Tomato, Feta & Basil Salad on Pinterest in the Spring.  I knew I’d be trying it this Summer with some fresh corn.  I was a little worried about the flavor combinations and it being a hot dish but it was delicious!  As you can see from my inferior picture, I did not use cherry tomatoes.  I had plum ones in the house so I seeded and chopped those and used basil from the hubs’ herb garden.  I highly recommend this recipe.

I served the salad with the best hamburgers I’ve ever made.  And I’ve made some pretty good hamburgers in my life.  Flavorful hamburgers will all kinds of stuff in them: Monterey Jack Turkey Burgers, Turkey Stuffing Burgers, Pacific Rim Turkey Burgers, Inside-Out Beef Bacon Cheeseburgers, hamburgers with a little ranch dressing and freshly grated pepper mixed in, etc.  The burgers I made tonight were just plain ole 80/20 ground beef, but the way I cooked them made all the difference in the world!

When I make burgers, I split 1 lb of ground beef into 4-6 burgers, depending upon how much other stuff I put in them.  Tonight, I divided the 1 lb of ground meat into 8 balls.  I have a panini press that opens up completely flat and came with both griddle and grill plates.  I opened that thing up, put on the griddle plates and heat up to sear/425 degrees.  Than I put the back, flat side of my bash ‘n chop kitchen tool on top of a ground beef ball and hit it with my meat mallet, smashing the ball into a cardboard thin patty.  I saw this technique used on a show last night.  A gentleman was touring the US, visiting the best burger joints.  One of the places flattened their burgers like this and served 2 on a bun with 1 slice of cheese in-between.  Then they fried the burgers in a pot of grease that is over 100 years old!  I cooked mine on my dry griddle plates.  The burgers weren’t handled much because I wasn’t mixing anything into them and being so flat, they cooked in a flash.  That’s what contributed to the tastiness.  2 patties with a slice of American cheese in between them on a potato hamburger roll and we all agreed they were the best burgers we’d ever had.  I am going to make burgers like this from now on!

#16: I had to learn to not fight dirty.
The hubs and I spent a lot of time bickering this weekend, so I figured it was time to put up another post about fighting.  And the funny thing is, the bickering we did all weekend was not your normal, “I want this and not the that that you want” or “I’m right and you’re wrong”.  We were arguing for each other, not ourselves, if that makes sense.   Here’s one example: we both had places to go at the same time on Saturday.  The truck has excellent A/C and the Volvo’s A/C only works sometimes, and even then it’s not very cool.  We each wanted the other to take the truck and be comfortably cool and got in a raised-voices-and-slamming-things argument about it!  “You take the truck!”  “NO!  You take the truck!”  LOL
As I’ve said a few times already in this series, I was a professional, down-and-dirty fighter when I got married and I learned how to be one at home, growing up.  Ugly, red face in his face; yelling; finger-shaking; stomping; slamming doors; breaking things; cussing, including saying “fuck you”; button-pushing; throwing issues in his face I had no business bringing up; and then, not letting him leave when he needed to get away from the raging bitch in the house and take a breath.  I don’t blame him for wanting to leave; I was a lunatic!  Who wants to be around that?  Plus, I was so good at button-pushing, that I started an anger in him he’d never felt nor let out before.  He wanted to leave before he got as mad as me because he’s twice my size and could snap me like a twig if he wanted to.  But when he tried to leave to let us both cool down, I blocked his way.  I’d fling myself against the door and lay on the guilt trip – “what if you have an accident?  What if you die and we never see each other again?  How do you think I’m going to feel knowing that these were out last words?  Let’s work this out and then you can leave!”  But all I really wanted was for him to stay long enough for me to get a rise out of him, get him to rage like I was doing, get from him what my mom was never able to get out of my dad.  Pretty sick, huh?

 

It’s a true testament to how much this man loves me that he stayed.  I would have walked out and never gone back if the roles were reversed!  But he told me this had to stop and a couple of times he actually showed me what happens when I push him too far.  Seeing that convinced me I had to grow up and stop this shit.  I’ll give you an example in another post later this month…

Giveaway: More Time Moms Family Organizer 2013

This calendar is one of my favorite things!  I’ve been using it for the past 7 years and it’s the best calendar I’ve tried.  The best feature is that it is plain old heavy paper, no glossy print paper.  So you can write, erase and re-write with ease.  The 2nd best feature is that every day has a large, lined space.  Plenty of room for me to jot down activities and menus for each day.
In the back, you’ll find a page for important numbers and the 3rd best feature, IMO, stickers.  When my calendar is full of writing, it can all blur together and inevitably, something gets missed.  Also, when the hubs or B look at the calendar full of my pencil writing, their eyes glaze over and they see nothing.  These stickers get everyone’s attention and make activities stand out.  There are stickers for:

And my 4th favorite feature is the sturdy pocket in the back.  When an invitation arrives in the mail, I put the name and time of the event on it’s date and put the invitation in this pocket.  If there is a form or permission slip that we need to take with us somewhere, it goes in the pocket.  Otherwise, they will get lost in the black hole that is my home.  When it’s time to go to the event, I know right where the invitation is, with the address of where we’re going, and we are all set to go!  It’s a 16-month calendar, September of one year through December of the following year, perfect for keeping an entire school school year in one place, if your school year falls within those months.
